A long time ago in a far off universe there were common foods that were just plain good for you. Safety experts and law makers legislated as if we are all equal to the most stupid person and wiped out so much. One of those things that sticks in my craw is raw milk. Ideally bought at the farm gate. The benefits of raw milk in our society have all but been forgotten. Once upon a time if you had a hospital stay your were given a glass of raw milk and a junket as dessert. The junket being the main thing. It is full of good bacteria and enzymes etc. It was truly a healing agent used across the world. Now they give you juice and jelly. Whats that going to do for you.  You can make junket with pasturised milk but it just sets and has little of the health benefits. This century getting raw milk is an impossibility for us city folk.

The good news is recently a new product has emerged that looks to be the real thing. Cold Pressed Raw Milk. It makes junket that is firm and full of goodness. And you know what, junket is really easy and quick to make and delicious to eat. One after dinner might be better than an apple a day.


Ingredients

1 Junket Tablet
480 ml Milk Cold Pressed Raw
50 ml pouring cream (optional)
Vanilla essence or flavouring.
40g castor sugar
Food colour or Tumeric powder
Nutmeg


Method::
Heat the milk and sugar to <40deg and stir till the sugar is dissolved. Add Vanilla and colour.

Set aside to cool till <38 deg.

Crush the junket tablet and dissolve in a little water. Add to milk and stir 10 seconds.

Pour into 4 Ramikins. Stand 5 minutes then dust with nutmeg.

Stand 30 minutes on the bench and refrigerate.

Only just heat the milk. It will set at 37deg no problem. The less heat the more beneficial bacteria. Also if the milk is hotter than 45deg the junket may not set.
