This is how pancakes were made in the 1970's when they became all the rage for a brief time. Till now pancakes and waffles aren't big in Australian culture. I feel fortunate to come from a family where homemade pancakes were part of breakfast every Sunday. Along with liver, eggs and bacon in gravy, tripe in white sauce, steak and kidney and porridge. Those were the days! And we wonder why our fore fathers didn't live past 65. At least the pancake bit is something I have carried on in my family.
I cook this old recipe from time to time. As I was raised on this recipe I like it a lot. A great retro recipe. Pure in ingredients and pure in taste.
Like taking out my old persimmon woods and forged irons for a game of golf.
Nostaglic. However, my kids still much prefer my later buttermilk version of
pancakes and rightfully so.
Make sure you do the first step of rising the flour in warm milk. Do not over mix or they will end up heavy.
This batter works really well for pikelets for afternoon tea. Strawberry jam
and whipped cream. Just great.
