Sift the flour and only just loosely incorporate the warm milk and let stand 30 minutes. Do not mix into anything like batter at this step.

Whisk the egg white and 1 tsp of sugar together till stiff.

Mix together the egg yolk, sugar, and vanilla and add to the flour and mix well.

Fold in the egg white in 2 stages.

Grease a moderate electric fry pan with butter or lard and add in 100ml of mix. Cook till bubbles begin to burst. 1 minute. Flip and cook a further 1 minute.

Serve with Butter, golden syrup and whipped cream. or sugar, lemon juice and cream.

 

200g plain flour
250ml milk at 45°

2 Tbs Sugar
1 Tbs melted butter
1 egg yolk
1 tsp Vanilla extract

Water as required.

This is how pancakes were made in the 1970's when they became all the rage for a brief time. Till now pancakes and waffles aren't big in Australian culture. I feel fortunate to come from a family where homemade pancakes were part of breakfast every Sunday. Along with liver, eggs and bacon in gravy, tripe in white sauce, steak and kidney and porridge. Those were the days! And we wonder why our fore fathers didn't live past 65. At least the pancake bit is something I have carried on in my family.

I cook this old recipe from time to time. As I was raised on this recipe I like it a lot. A great retro recipe. Pure in ingredients and pure in taste. Like taking out my old persimmon woods and forged irons for a game of golf. Nostaglic. However, my kids still much prefer my later buttermilk version of pancakes and rightfully so.

Make sure you do the first step of rising the flour in warm milk. Do not over mix or they will end up heavy.
This batter works really well for pikelets for afternoon tea. Strawberry jam and whipped cream. Just great.
