Let the Ice cream stand on the bench for 20 minutes.

Bloom the Gelatin in a little water

In a large bowl combine the jelly crystals and the gelatin and the boiling water. Stir to make sure all the gelatin is dissolved.

Add the Ice cream and stir in till fully melted. Pour into a 2 litre square casserole dish. Let stand for 30 minutes on the bench.

Transfer into the refrigerator to set overnight. Cut into squares and plate to serve.
2 Packets aeroplane jelly
1 packet unflavoured gelatin powder
100ml Water

900ml boiling water
1 litre Ice cream

Pictured is strawberry jelly with vanilla Ice cream. This is a great combination. Try any comination of flavours you like.

1 packet of orange, 1 packet of passionfruit and vanilla ice cream and most people will think it is a cheesecake.
This recipe looks so difficult but is so simple. Great for partys, particularly for kids. When I make this in summer it sits in the fridge and the kids just eat away at it over a few days. Its very tasty with a great look and texture.

My grand mother showed me this recipe when I was staying at her house as a 6 year old. I remember she swore me to secrecy at how it was done and she always made out it was a lot more difficult than it really was. Bad Granny!
