Heat 2 Tbs of oil in wok.
Fry off the chicken for 90 secs.Set aside
Add the extra 1 Tbs oil and fry the garlic 30 sec.
Add the bacon, ginger, carrot and onion. Fry 30 secs.
Add the cabbage and stock. Crack in some pepper
Bring to a boil for 5 minutes
Add the mushrooms, tabasco, oyster sauce, wine, soy sauce and sugar. Simmer
5 minutes.
Add the bean sprouts and potato starch.
Add the chicken. Simmer 5 minutes.
Let stand in a serving bowl 10 minutes and serve.
3 Tbs peanut oil
3 Chicken tenderloins sliced
1 Tbs garlic finely chopped

1 carrot juliened and par boiled
1 Tbs ginger finely chopped
1/2 Small Cabbage head shredded
400ml chicken stock

1 can straw mushrooms halved
1 bunch of bean sprouts
4 large dash's tabasco
3 Tbs oyster sauce
2 Tbs Shoaxing wine
2 tsp Soy sauce
1 Tbs sugar
1 Tbs Potato starch in 1 cup of waterVariations:
dried egg noodles blanched and grilled, Baby sweet corn. Whatever.
Wouldn't it be great if we could just eat what we want when we want. Shame, shame, shame. So this is a great dish for when I am on my health kick diet. And it is yummy and very satisfying. I learnt this from watching a street vendor cook this in Hangzhou. He had a 20 person line up so I guessed his recipe was the best one. Eat this for dinner 3 times a week and you will loose weight. Its also a great side dish if your doing a Chinese banquet. Leave out the bacon and its a bit healthier and also a vegetarian dish.
A lot of people think the Chinese are slim and healthy from what the eat. Having lived there a lot I can tell you this is fantasy. In recent years the Chinese are showing real signs of becoming an obese society. The diet is strongly based around pork fat, MSG and cooking oil, mixed with a bit of rice and vegetables. Or Duck and fried pancakes. They love Pizza Hut and KFC. A quarter of the supermarket shelves are devoted to candy and chocolates. Like all of us, as they become richer they are becoming fatter.
